I was told that it rings out north and south to call the workers in from the fields but this seems a bit strange when it is every hour and not just at the beginning and end of the day.

I have always thought it was because when it rings out first, people think "Oh d*mn" (or French words to that effect), "I forgot to count them." But they know there is a second round coming and they are them alert to start counting at the first one!

Incidentally, have you noticed how many church clocks are made by Lussault, of Tiffauges? http://www.lussault.eu/
Even far beyond the Vendee you see their name on the face, or sometimes just "L.T."

I don't think that is the reason for them ringing twice, but I know that's exactly what I think when they start to ring!
